Nakasone Kojiya Co. Background of Development
In Japan, approximately 700,000 tons of bean curd are produced annually in the tofu manufacturing process, of which 30,000 to 70,000 tons are discarded as industrial waste. Okinawa is no exception. Okinawa's unique tofu culture, including island tofu, remains strong, with approximately 2,000 tofu shops. Tofu shops, which support Okinawa's dining table, are also troubled by the cost of okara disposal, and our efforts began with the hope of solving this problem using the fermentation technology we have cultivated. A small malt company with nine employees in Okinawa is taking on the challenge of solving social issues.

Versatile enough to be used in a variety of ways
Mixing Mazetoko with ground meat makes a delicious hamburger steak as it is, and mixing Mazetoko with vinegar and olive oil makes it easy to create homemade dressing. This is a new seasoning that has never existed before and can be used in a variety of situations.

This seasoning is full of nutrients such as dietary fiber contained in okara, vitamin B group, oligosaccharides, and pantothenic acid, which are produced in the fermentation process.
*Contains approximately 35% okara
In reality, processed foods containing okara often contain only a few percent of okara, but "Mazetoko" contains about 35% of okara, making it a product that contributes greatly to the consumption of okara.
