Nogami, a specialty bakery specializing in high-end "fresh" bread, will begin selling "Japanese chestnut hojicha 'fresh' bread" as a collaboration product with Saori, a Japanese chestnut specialty shop located in Kiyamachi, Kyoto, from October 1 (Sunday) to November 30 (Thursday), 2023, at all stores in Japan, in limited time only. The new product will be available in limited quantities at all stores in Japan.

In pursuit of the "ultimate bread" that everyone from children to the elderly can enjoy right down to the crust, Nogami aims to contribute to the rich dietary life of its customers by providing them with "fresh" bread that they can eat every day as a staple food and never get tired of it. In this context, we are working on the development of new products with the hope that customers, both those who regularly patronize Nogami and those who have yet to try it, will enjoy Nogami's "fresh" bread in a variety of situations in their lives.
This time, we met "Saori," which has its main store in Kyoto and serves freshly squeezed desserre Mont Blanc right in front of customers, and had the opportunity to develop a new bread together. Based on the "Founded Nogami" bread, which is soft to the touch and has a distinctive savory flavor, the same Japanese chestnut paste used in Saori's Mont Blanc is lavishly rolled into the loaf. In addition, cut Japanese chestnuts are added and flavored with a hint of fragrant hojicha (roasted green tea). The rich sweetness of the chestnuts, the smoothness of the bread, and the texture and flavor that changes with each bite are the result of a collaboration between the top brands of Japanese chestnuts and bread.

This brand has a café with its main store in Kyoto, where Mont Blanc is made to order and served in front of the customer in a delicate brocade-like appearance.
The project started when "Nogami" asked us if we could supervise the production of chestnut bread suitable for the autumn season.
Although this Mont Blanc dessert can only be enjoyed in Kyoto, we gladly agreed and proceeded with the project, hoping that as many customers as possible will be able to enjoy the goodness of "Saori". We provided the paste made by carefully backing Japanese chestnuts, which are fragrant and have just the right amount of sweetness, and supervised the recipe.
When eaten as it is, it has a mellow sweetness and melt-in-your-mouth texture. When baked, it has a sweet and flaky flavor like roasted chestnuts, and the fragrant hojicha (roasted green tea) gives it a slight aroma.
