Ramen Kame-O" is a popular ramen restaurant that serves melt-in-your-mouth "homemade Chaashu" and has a lineup of products such as Tonkotsu Ramen, Tomatora Ramen, and Abura Soba (fried buckwheat noodles).
The development of the vegan menu was triggered by the fact that in 2019, before the new coronavirus epidemic, our CEO Ohsato spent a year eating at more than 100 ramen stores in the U.S. He saw that all of them had vegan menus, and that even those who cannot eat animal products were enjoying their ramen. I was inspired by the sight of people who could not eat animal products enjoying their ramen.
As you know, animal ingredients are essential for pork ramen. However, I was shocked by the taste of the ramen I tasted in the U.S., which was so delicious that I could not believe that no animal ingredients were used.
The number of foreign visitors to Japan was already increasing year after year, and we began developing new products in response to the growing demand for vegan menus. After three years of development, we have finally completed the product and will start selling it at our Morinomiya branch, which is located near Osaka Castle and is expected to attract many foreign customers.
We are confident that this new product was developed with the sole intention of making the delicious taste of Japanese tonkotsu ramen available not only to vegans and vegetarians, but also to those who cannot eat tonkotsu ramen for health reasons such as allergies, animal welfare, or religious reasons.

We have combined dozens of ingredients in pursuit of the ideal flavor, aiming for "a ramen that is more like Tonkotsu Ramen than Tonkotsu Ramen made with Tonkotsu bones. We have developed a rich and deep flavor like the original Tonkotsu Ramen that uses animal ingredients, and a satisfying ramen that leaves you feeling not at all satisfied.
The speciality of Kame-O is "Cha-A-Shu". Chaashu is one of the essential toppings for ramen. Using a unique manufacturing method, we have recreated a hearty and satisfying texture and flavor without pork and with vegetable ingredients.

Vegan chashu is also available without ingredients such as chives, garlic, rakkyo, onions, and leeks. Oriental vegans, who do not eat plant-based ingredients with strong smells and pungent aromas, can also enjoy our dishes.

The newly released vegan gyoza are made from non-genetically modified Japanese soybean meat and mixed with Japanese cabbage, chives, garlic, etc. using a special cooking method to achieve the same taste as regular meat gyoza. The skin is glutinous, crispy and juicy after baking. Seasonings are kept as simple as possible, including salt and soy sauce, and Japanese ginger and garlic are used to maximize the flavor of the ingredients.

Future Development
After its introduction at the Morinomiya store in Chuo-ku, Osaka, "Vegan Shiranyu (Tonkotsu-style) Ramen" will be introduced at the reopening of the JR Shin-Osaka Station store in late January 2024 (details will be announced in a press release around February 2024).
In the future, we also plan to gradually introduce vegan tomato-ramen, vegan cheese tomato-ramen, and other products at other stores, based on sales trends at the Morinomiya and Shin-Osaka stores and by understanding customer needs.
In fiscal 2024, we plan to open a vegan specialty store, aiming to establish a new business format that is not bound by conventional genres.
