The rich, gentle sweetness of the marron glace kneaded into the ice cream is characterized by the time-consuming and labor-intensive process. Chestnut kumquats cooked in a kettle are combined with domestically produced milk, and the marrons glaces are mixed in afterward to create an ice cream with texture and a hint of Western liquor.
