The fresh bonito is caught and flash-frozen in a single fishing line. The bonito tataki is grilled over charcoal at high heat and mixed with Kagoshima yuzu (citrus fruit juice). Japan Food Selection is the first comprehensive evaluation and certification system in Japan by the Food Analysts Association of Japan (Chairman: Hiroyuki Yokoi), which specializes in food products and food ingredients. It is the world's first evaluation and certification system for food products and food ingredients that takes into consideration the delicate tastes, preferences, sensibilities, and food culture of the Japanese people. 23,000 qualified food analysts, who are consumers with professional "food information" knowledge, are involved in the evaluation process.
