The basics of making noodles are only flour, salt, and water. The simplicity of this process allows the taste of the ingredients to be felt straight away. For this reason, we use carefully selected ingredients. For the flour, only the central part of the wheat is used...to use an analogy with rice, only the part used for daiginjo is used, and this produces a sweetness without any cloying taste. The salt is a perfect blend of common salt and natural salt (Hakata salt and Uzushio salt) to maximize the sweetness of the flour. These carefully selected ingredients are adjusted to the optimum balance according to daily temperature and humidity by our skilled noodle craftsmen.

The "ultra-thin noodles" are made by repeatedly "twisting, forging, and stretching" to create as many as 18 layers per noodle, and then stretching them to the thinnest possible thickness, which is thin but firm and gives the noodles an outstanding thirst-quenching taste.
