Higashi-Shirakawa Tea House is a brand of "edible Japanese tea" sweets produced in Higashi-Shirakawa Village, Kamo-gun, Gifu Prefecture, where Mino-Shirakawa tea is grown. In addition to its regular product lineup, the company has created "Gokumi Japanese Tea Pudding," a pudding made with rare tea leaves, milk, eggs, sugar, and other ingredients that are the utmost in luxury, with the idea of "making a pudding with the finest tea leaves, even though we may not be able to make or sell many. This pudding is filled with the desire of the tea producing region to continue producing delicious tea and to deliver it to as many people as possible.
Development Background
Sencha pudding "O-Ohkimi" and Hojicha pudding "Miko Kannagi" were created from "our commitment to tea" and "the thoughts of tea farmers".
Mino Shirakawa tea has a long history dating back to the Azuchi-Momoyama period. In Higashishirakawa Village, where the tea is grown, beautiful tea fields spread out on the steep mountain slopes, and the unique highland climate with large temperature differences between day and night produces tea with a rich flavor. There used to be 200 tea farming households, but now there are only 26. We want to preserve the tea culture of Higashishirakawa Village, which has been preserved through the cooperation of tea farmers, tea merchants, and tea masters. With this in mind, "Sencha" sweets were created as "eating tea" so that people can enjoy the taste of Mino Shirakawa tea even more.

■Using one of Japan's leading brands of tea grown at the northern limit
Higashishirakawa Village is located in the northernmost part of the main tea production area and has an ideal environment for tea production with moderate humidity, sunshine, and temperature differences between day and night. The Mino Shirakawa tea grown here is loved by many for its concentrated umami aroma and deep flavor.
O-okimi (Sencha pudding)
This pudding is made from hand-picked tea that won the first prize at the Gifu Prefecture Tea Fair in 2023.
At the National Tea Fair, the highest tea judging competition in Japan, tea leaves selected from all over the country are judged. The quality of the tea (appearance, aroma, color, and flavor) is evaluated during the judging, and the highest ranked tea is awarded the title of "1st class 1st seat" and the Minister of Agriculture, Forestry and Fisheries Award.

Kannai (hojicha pudding)
This pudding is made from freshly picked, deep-roasted hojicha (roasted green tea) from the first harvest of Mino Shirakawa tea in 2023.
Hatsumikomi" refers to tea picked on the first day of the new tea harvest. Shincha is a new tea tree that rests firmly during the fall and winter, and the new shoots grow slowly in the early spring when it is still chilly. These new shoots are full of tea nutrients, theanine, and other nutrients that make the tea delicious and full of flavor. Among them, "Hatsu-hatsumi-shincha" picked on the first day is softer and heavier to the touch, and its ingredients are more concentrated, resulting in a higher quality tea.

It took us about a year from the time of trial production to create this product, and we made no compromises at all in our pursuit of the best ingredients.
1) Using the best grass-fed milk
We use the best grass-fed milk from Hagiwara Farm, a pasture-raised dairy farm in Okhotsk, Hokkaido, which uses no pesticides or chemical fertilizers and is particular about its soil and grass.
In addition to its rich flavor and taste, grass-fed milk is said to prevent dementia and have anti-cancer properties.
2) Eggs raised on organic, natural rice
Rare eggs raised on hazer-dried organic natural rice as the main feed in the backwoods of Higashishirakawa Village at an altitude of 650 meters are used in this luxurious product.
3) The sugar used is "Awa Wasanbon Sugar
It is one of the few domestically produced sugar made from sugar cane called "chiku-tou," which is still made almost entirely without the use of machines. Among them, we use high-grade wasanbon sugar produced in Tokushima Prefecture, which also brings out the original sweetness of the ingredients.

The excellent puddings, the result of repeated trial and error, are all made by hand in Higashishirakawa Village. In addition to 11 kinds of puddings made with tea, there are more than 20 kinds of seasonal puddings made with fruits that are sold at department store events. Through trial and error, the amount of tea and sugar was adjusted to create a taste that is not too sweet, but has a good balance of aroma, flavor, and astringency. Rich in catechins, it is also a healthy treat.
