Background of the opening of "Aitaka
This year marks the 40th anniversary of the opening of "Aitaka", an izakaya in Takaido, Suginami Ward, Tokyo.
We have had three restaurants in the area: "Sake Brewery Gokuraku", "Sosaku Ryori Isshin", and "Kyushu Ryukyu Dining Aitaka", and now we are operating mainly as "Aitaka", which serves charcoal grilled dishes and rice cooked in a rice kettle over an open fire.
Our first encounter with Mr. Fukuyou, who runs a farm of "umi budou" (sea grapes) on Kutaka Island, dates back to November 2016.
In connection with the opening of "Kyushu Ryukyu Dining Aitaka" eight years ago, we went to visit a producer of "umi budou" shipped directly from Kutaka Island, Okinawa, and were struck by the passion of the owner, Mr. Fukuji, and the relationship between Aitaka and Okinawan cuisine began to deepen.
Mr. Fukuyou, who runs a farm of "umi budou" (sea grapes) on the island of Kutaka, developed this ilabuu dashi soup stock in collaboration with a long-established dashi specialty store in Kyoto. Irabue has a strong vitality and is known as a medicinal food and as a court dish by the King of Ryukyu.
Mr. FUKUYOU is also known as "Green Caviar" and "Umibudou" is the "World's First! Trinity Umibudou" using the ecological fusion photocatalyst Trinity as "Trinity Umibudou".
It is said that by eating it, it purifies the body and mind, and even the environment will continue to be purified.

Aitaka wanted to bring the thoughts of Mr. Fukuyou, who has been a longtime friend of Aitaka, to the people of the Takaido area of Tokyo, so we were inspired to create the ultimate Yakuzen Longevity Soba using umi budou, which is said to be good for the body, mind, and environment, and the Y-rabou soup stock that we developed.
