Background of the project
We want to bring to Japan high-quality, affordable horse sashimi that combines 2,000 years of nomadic culture and the latest processing technology.
We want to protect Mongolian nomadic culture, which is in decline.
We want to bring out 100% of the potential of horse meat raised in Mongolia.
These are the reasons why we launched this project.
Mongolian nomads
■ Characteristics
*Outstanding umami flavor
All nomadic horse meat sold in advance will be made from horses raised in the fall, when they are in season. In order to survive Mongolia's harsh winters, which can reach temperatures as low as -50°C, horses store abundant fat as nourishment in the fall. This nutrition becomes umami, and horses in autumn have the best fat and meat quality of the year, so we insist on using horses in autumn.
Affordable price
All horses used for nomadic horse meat are carefully raised by Mongolian nomads in the steppe. Because the horses are raised on the steppe in accordance with the natural cycle of life, they do not have to pay for feed or fuel, which are usually required for the growth of livestock. This allows us to raise horses at a lower price than the general public, which in turn allows us to sell nomadic horse meat at a reasonable price.
