About "HAKATA BOKOMEN!
HAKATA BOKOMEN!" is a frozen fish noodle soup that can be easily eaten right away in the microwave, made by Hakusui, a long-established fish paste shop established in 1903. It comes with protein-rich, low-fat noodles and ingredients, and is available in three soups: Hakata tonkotsu (pork bone marrow) soup, yuzu kosho (yuzu citrus pepper) soup, and mentaiko cream soup, all of which are typical of Fukuoka.
CHEF-1 Grand Prix runner-up food creator Chisato Maruyama ( https://www.foriio.com/chisato-food ) produced the soup recipe. No wheat is used in the noodles, making them gluten-free and healthy. It is also a hassle-free and easy way to consume fish protein.

Noodles are made from surimi made from fresh fish procured from local fish markets.
Most paste products are made from frozen surimi imported from overseas. Hakusui maintains the traditional taste and manufacturing method, and manufactures surimi using fresh fish "Eso" purchased from the local fish market and processed in-house as raw material. (*1).
(*1) BOKOMEN!" is made from such surimi produced with Hakusui's special care. Noodles made from surimi are rich in protein and low in fat, with 73 kcal per 100 g, 8.1 g protein, and 0.1 g fat. I am Yudai Egoshi, the fifth generation of Hakusui.
Compared to the past, the production and consumption of fish paste has been decreasing, and more and more fish paste companies are going out of business these days. However, it is a traditional Japanese food that is low in fat and high in protein, and provides the nutritional benefits of fish easily. In returning to the family business and dealing with customers, I have received many comments such as, "My child hates fish, but with fish paste, he eats a lot of it.
