Chef Yuki Ito is a 27-year-old young chef. He studied under Chef Keisuke Fujitani of "maison FUJIYA Hakodate," one of our food and beverage brands, and opened "Table de reveur" at the age of 26 through our brand manager system after 7 years of training. Chef Yuki Ito not only uses traditional techniques, but also always works with sustainability in mind, such as taking fon from scraps of vegetables, meat bones, fish bones, and other parts that would normally be discarded. In addition to utilizing Hakodate-grown Ezo-shika deer, the chef is also developing a menu that focuses on plant-based and vegetable-based ingredients. Yuki Ito

Born in 1996.

While attending Hokkaido Koshio Gakuen Culinary Arts College, he gained culinary experience at La Sante and w27 restaurants in Sapporo. 2016 he joined restaurant obtenirK as opening staff, and in 2020 he became sous chef at maison FUJIYA Hakodate under his mentor, Keisuke Fujitani. In 2023, he will be the chef of Table de reveur, a casual French restaurant in the sister restaurant, patisserie Maison FUJIYA.

He provides cuisine and service that makes the most of local ingredients and creates an upscale yet somewhat homey atmosphere so that customers who are not familiar with French cuisine can enjoy it in a casual manner.
