Ceory Co., the operator of Ginza Hakobune, celebrates its 20th anniversary on November 1, 2024. In commemoration, starting from November 1, all four Ginza Hakobune locations will offer a unique “20th Anniversary Course” menu tailored to each store. This special course features rich, aromatic matsutake mushrooms, flavorful Noto oysters, and fatty winter yellowtail. It also showcases Kobako crab and the rare Nodoguro (blackthroat seaperch), along with an array of premium ingredients from the Hokuriku and Shin’etsu regions and the bounty of the Sea of Japan. Each dish is carefully paired with select sake from over 250 partnering breweries, with a truly exceptional dining experience.

※2: What is Kobako Crab?
Kobako crab, known as the "Red Jewel of the Sea of Japan," refers to female snow crab harvested in Ishikawa Prefecture. The meat is noted for its intense flavor, while the crab’s inner shell holds bright orange immature roe (uchiko) and a rich, savory miso. The roe clusters, called sotoko, add a unique texture. The crab legs, although smaller than those of male snow crabs, are firmer and pack an intense flavor. Since the fishing season is less than two months and weather conditions often limit the catch, Kobako crab is highly prized. At Ginza Hakobune, only the finest, freshly caught crabs from Kanazawa are served.
