Maruya Honten Ltd. (Head office: Nagoya City, Aichi Prefecture; Representative Director: Ikuo Takasu), which serves Nagoya's famous Hitsumabushi in Aichi Prefecture, will open its first restaurant in the Kansai region in March 2025 at Osaka Station Umekita Green Place, which is directly connected to Osaka Station.
Five years have passed since Maruya Honten opened "Maruya Honten Tokyo Midtown Store" in Roppongi, Tokyo, the first store outside Aichi Prefecture, with the desire to make Hitsumabushi, Nagoya's local cuisine, a world-class dish.
In 2024, Maruya will open its second store in Tokyo, "Maruya Honten Ginza Glasse", and its third store near Nagoya Station, "Maruya Honten Meieki 3-chome", and in March 2025, it will finally open its first store in western Japan.

Outline of Umekita Green Place
Umekita Green Place will consist of commercial facilities, a pedestrian plaza, a station plaza, and a pedestrian deck, with a site area of approximately 12,500m2 and three floors above ground. There will be 20 stores, including retail shops, food retail shops, restaurants, and a food court. The total store area is approximately 3,750m2.
From December 12, 2024, there will be cab and general vehicle loading and unloading areas, as well as a large bus parking lot that will be put into service in March 2025.

We carefully select the fattiest eels of the season and grill them over charcoal until just barely crispy.
We pursue the best way to make the eel crispy while retaining its plumpness. Once a month, we hold a "grilling meeting" where the manager and grilling staff gather to continue researching the grilling process. The sauce is based on "tamari soy sauce," a traditional method of making teriyaki since 1843, and is mixed with grilled eel and eel bones, etc., and mixed with several kinds of soy sauce in a perfect balance. The sugar content, viscosity, etc. are frequently checked and added to the broth. The soup stock for Hitsumabushi is made from Hokkaido kelp and our original blend of shavings.
In addition to the eel and sauce, we also use a unique blend of rice and pickles to match the hitsu-mabushi, and we hope you will enjoy the Maruya-style Nagoya specialty "Hitsumabushi".
You can enjoy Hitsumabushi in three different ways: the first bowl as it is, the second bowl with condiments on top, and the third bowl with broth.

Founded in 2005 by owner-chef Sanmei Sasaki, who trained for many years at a Japanese restaurant in Aichi Prefecture. With a desire to make eel, a traditional Japanese food culture, accessible to a wide range of people, Maruya offers hittu-mabushi and other eel dishes at a price that allows customers to enjoy eel casually, while being particular about taste and ingredients.
