Based on a year and eighteen months of dialogue with local residents, the corporation, in cooperation with the town of Taga, has been working to solve local issues and create attractions utilizing local resources through the Regional Development Cooperation Corps system. As part of this project, a sake brewery that has been abandoned for more than 30 years in the region will be renovated to create a sake brewing business with the aim of revitalizing the region.

This craft liqueur has a bittersweet, gentle flavor that reminds one of the bounty of Shiga's satoyama. For the base sake, we use upcycled Kastori shochu made from Daiginjo sake lees, and for the marinade, we use healthy ingredients such as locally grown beets, spices, herbs, and sugar beets grown in Taga Town without using agricultural chemicals.
