To mark our 60th anniversary in 2024, we are dedicated to showcasing the new appeal of chlorella not just as a "health food," but as a plant-based ingredient that can be easily enjoyed in everyday meals.
As part of this initiative, we have collaborated with Chef Katsumi Kusumoto of SAIDO, the world's top vegan restaurant, to launch the new brand "mochotto with CHLORELLA." Now, as the third release in this series, we are excited to introduce three new products:

Bringing More Plant-Based Nutrition to Everyday Meals
In recent years, the global plant-based market has been expanding, and Japan has also seen a growing demand for dietary diversity.
Recognizing this trend early on, Chef Katsumi Kusumoto opened the vegan restaurant SAIDO in Jiyugaoka, Tokyo, in 2018. While plant-based diets are becoming increasingly associated with health benefits, he also noticed a lingering perception that they might be nutritionally lacking.
With this in mind, we saw an opportunity to collaborate with Chef Kusumoto to introduce Chikugo Chlorella as a plant-based ingredient that not only offers great taste and health benefits but also provides essential nutrients from vegetable. This partnership led to the development of the "mochotto with CHLORELLA Dressing Series”.
Enhancing Salads with Nutrition and Flavor
When people think of an easy and convenient way to include more vegetables in their diet, salads often come to mind. Wanting to make salads even more enjoyable and flavorful, we began developing two types of dressings (carrot and tomato) and a basil sauce that enhance both the nutritional value and visual appeal of meals.
We carefully selected 100% plant-based ingredients, ensuring that they are free from the five pungent roots (such as garlic, leeks, and chives) while also incorporating chlorella extract and chlorella powder. Through repeated trial and error, we worked to bring out the natural flavors and vibrant colors of the ingredients.
Over Two and a Half Years in the Making
After more than two and a half years of development, we have created a simple yet carefully crafted product that aligns with the desire to enjoy more vegetables at the table.
Chikugo Chlorella, which has long been valued as a health food, is now available in a more accessible form, bringing both nutrition and deliciousness to everyday dining.

2. A Smooth, Vibrant Taste Made Possible by Chikugo Chlorella
Chikugo Chlorella’s unique chlorella extract has a natural flavor-enhancing effect, allowing it to subtly balance the taste of combined ingredients without altering their original color or taste. This extract is used in the Carrot and Tomato Dressings, helping to soften the acidity of rice vinegar and bring out the natural sweetness of the vegetables.
The Basil Sauce is enriched with chlorella powder, which harmonizes the herbal aromas of thyme and rosemary, creating a well-balanced flavor that pairs effortlessly with various foods. Additionally, the natural richness of chlorella enhances the overall depth of the basil sauce, giving it a cohesive and full-bodied taste.
Moreover, chlorella’s natural green hue allows us to achieve a vibrant green color without artificial coloring agents.

We prioritize 100% plant-based ingredients, avoiding the five pungent roots and minimizing the use of additives to preserve the natural flavors and colors of our ingredients.
Additionally, our products are free from the 28 major allergens(Japanese standards), making them a safe choice for those with dietary restrictions.

Many conventional dressings contain additives such as pH adjusters, artificial seasonings, sweeteners, flavorings, colorants, and emulsifiers.
By incorporating chlorella, we have developed a dressing that is delicious, safe, and healthy—without the need for these additives.
・Basil Sauce
To ensure an even blend of basil and Chikugo Chlorella, we use only xanthan gum (derived from non-GMO corn) as a thickening agent, keeping the ingredient list clean while maintaining a rich texture.

Naruto Uzushio Salt (made in Tokushima)
For over 400 years, Naruto City in Tokushima has been known for its high-quality salt production, thanks to its ideal warm and rainy climate. Our dressings and sauces use this natural sea salt, harvested from the pristine waters of Naruto.
Sugarcane (made in Okinawa)
The sugar used in our dressings is minimally refined sugarcane, which retains its natural minerals and depth of flavor. This results in a more nutritious and flavorful alternative to white sugar, enhancing the dressings’ natural sweetness.
Pure Rice Vinegar (Made from Domestic Rice)
Instead of standard grain vinegar, we use pure rice vinegar made from domestic rice, which has a milder acidity and a rich, full-bodied flavor. This helps bring out the natural sweetness of carrots and tomatoes, creating a well-balanced dressing that pairs effortlessly with any dish.
