Aki Tsubaki (35/50m) Unfiltered Junmai Daiginjo Genshu_Bronze Award Certificate
This is the fourth in the "Aki Tsubaki" series, which began production in 2022, the 100th anniversary of Sasaki Shoten's founding, with the hope of returning the favor to the hometown where we were born and raised, and with a commitment to using only Hiroshima-grown ingredients, including water, rice, and yeast.
Due to last summer's heat wave, the sake rice in Hiroshima Prefecture was harder than usual, and alcoholic fermentation and saccharification took longer than usual, but the sake fermented slowly, resulting in a clean and refreshing taste. This "Aki Tsubaki" (35/50m) uses Yamadanishiki rice polished to 35% for the sake mother and koji rice, and Senbonnishiki rice polished to 50% using Satake Corporation's "Shin Gin" rice polishing technology for the premium rice. We hope that many people will enjoy this sake that has been further refined through the persistence of a local sake brewery, and we hope that you will enjoy the Hiroshima-style sake brewing.
Shin Gin" is a registered trademark of Satake Co.

◎The origin of the name "Aki Camellia
Aki" = "Miyajima of Aki" and "Aki County," the name of the region
Camellia = Camellia japonica, the town flower of Fuchu-cho
35/50m" = 35% Yamadanishiki for the mother sake and 50% Satake's Shin Gin Seibai (prototype polished rice) for the premium rice, and the "m" of Momiji yeast, a yeast produced in Hiroshima Prefecture, is used in the sub-name.
All of Aki Tsubaki's ingredients are produced in Hiroshima Prefecture. Therefore, we wanted to use a word that would represent the region in the brand name as well, so we used the name "Aki" to describe the area, which is still called Aki no Miyajima and Aki County.
