The freshness of the ingredients is the same as in the evening, with  the chef carefully preparing each piece of sushi, highlighting a selection of  seasonal ingredients in this lunch course.

■About the  Lunch Course

This  course offers authentic Edomae sushi, prepared by the skilled chef Koichi  Shinohara, who is renowned for his high-quality nigiri. Chef Shinohara  personally selects the finest ingredients every morning at Toyosu Market.

・11 pieces of nigiri (White Fish, Sea Urchin, Squid, Silver Fish (such as sardine, mackerel, or young gizzard shad), Tuna, Clam, Conger Eel, and more)

■Ginza Bashodo Warabi Mochi

Founded  in Osaka in 1868, Ginza Bashodoh uses carefully selected ingredients and the  traditional method of "open-flame cooking in a copper cauldron,"  passed down through generations. This results in a warabimochi with a firm  texture, yet a smooth and pleasant mouthfeel.

At Akasaka Sushi Shino, the warabimochi is freshly sliced justbefore serving and garnished with matcha kinako, a blend of Japanese Tanbablack soybean flour and matcha green tea.

From left  to right: "Oze no Yukidoke" (Gunma Prefecture), a refreshing sake  with a light, fruity flavor.

Next is  "Tenmei 'Sarasara Junmai'" (Fukushima Prefecture), a refreshing and  light Junmai sake that sparkles like fireworks in the summer night sky,  bringing a flutter to your heart. With its low alcohol content, it’s easy to  drink and has a clean, crisp finish that is especially refreshing on hot days.

Lastly,  "Kokuryu Shizuku" (Fukui Prefecture), known for its elegant, delicate  aroma and refined taste.

At Sushi  Shino, we carefully select the finest seasonal ingredients. Our evening  omakase course (starting at ¥20,000) includes a variety of snacks, allowing you  to enjoy the best of the season’s offerings.


1.Summer-Only Sea Urchin with Shells      

Every  morning, we source fresh sea urchins with shells from the market, which are  then carefully peeled by hand at the restaurant. We never use alum, so you can  savor the pure, fresh, and creamy flavor of the sea urchin. The origin of the  sea urchins changes daily, with varieties from Hokkaido and Sanriku available.

2. Abalone from Chiba Prefecture

We use large abalones weighing 500 grams, sourced from Chiba Prefecture.The abalone is served steamed, with its liver used as a sauce, which is thenmixed with rice to create a resort-style dish. The rich umami of the abalone isfully showcased in this exquisite creation.
