Background｜Why this project now?

The restaurant industry on Ishigaki Island faces a structural problem in that January and February, when the number of tourists settles down, is said to be the most difficult time of the year, and many restaurants are in the red.

Instead of raising prices or downsizing, we chose to create a reason for people to come to our restaurants.

This project was born from the reversal of the idea of offering Ishigaki beef, which is known as a high-class food, at an affordable price.

The dish offered this time is "Yakishabu" using a rare, specially selected ribeye part of Ishigaki beef that has a particularly excellent balance of flavor and fat.

The dish is a combination of thinly sliced Ishigaki beef, quickly cooked, and served with a sauce made of warishita and beaten egg at the moment when the aroma and flavor are at their peak.
